TikTok-ed Tortellini

I have been thinking about trying this method since the first time I saw it on TikTok, but I just couldn’t reconcile with feta. We had a falling out when I was pregnant 12 years ago and I guess I just can’t let go of a grudge. I have always loved Boursin, so when I saw this variation I was all in! I just happened to have tortellini in my pantry so, batter up! I also added sun dried tomatoes, balsamic, and basil; an ode to my favorite Double Tomato Bruschetta recipe. My favorite thing about this recipe was the flavor, but my second favorite thing was the low dish count.

TikTok-ed Tortellini

I put my own spin on the TikTok pasta fad!

Ingredients

  • 1 pt cherry tomatoes rinsed and drained
  • 2 tbsp olive oil extra virgin
  • 1 tsp salt
  • 1 pinch red pepper flakes
  • 5.2 ounces Boursin cheese
  • 12 ounces tortellini pasta (or pasta of choice) dry
  • 1/2 head garlic peeled and chopped
  • 1/4 cup sun-dried tomatoes diced
  • 2 tbsp balsamic vinegar
  • 1/4 cup heavy cream
  • 1/4 cup Parmesan cheese grated
  • 1/4 cup basil chopped

Instructions

  • Preheat oven to 425°F.
  • Add tomatoes to 9×13 casserole dish, drizzle with oil, season with salt and pepper flakes, mix to coat.
  • Make a hole in the center of the tomatoes, place the cheese there.
  • Place in the oven and cook for 15 minutes.
  • Cook tortellini according to package directions.
  • Then, add garlic, sun dried tomatoes, balsamic vinegar, and cream to tomato mixture, without disturbing cheese; cook for an additional 15 minutes
  • Add cooked, hot tortellini, parmesan cheese, and basil to tomato mixture, mix well.
  • Serve hot, with extra parm for extra yum!
