Cajun Garlic Caesar with Cayenne Croutons

A riff off of my mom's "Caesar" salad

Ingredients

For the salad:

  • 4 cloves garlic minced
  • 1 pinch red pepper flakes crushed
  • 1/2 cup extra virgin olive oil
  • 1/2 cup balsamic vinegar
  • 4 cups romaine lettuce shredded
  • 1/4 cup parmesan cheese chipped, shredded, or grated

For the croutons:

  • 4 slices less then fresh bread cubed
  • 2 tbsp extra virgin olive oil
  • 1/4 tsp cayenne pepper
  • 1/4 tsp black pepper
  • 1/2 tsp garlic granulated
  • 1/2 tsp salt

Instructions

  • In wooden salad bowl combine garlic, red pepper, oil, and vinegar, then mash garlic into the side of the bowl and let sit for 10-15 minutes.
  • Preheat oven to 350°F and then mix oil and seasonings in a pourable cup, such as glass measuring cup. Place diced bread in bowl and drizzle with oil mixture. Toss to coat and spread evenly on baking tray. Place in oven and bake for 10-20 minutes, tossing half way. Remove from oven when done and set on side.
  • Add shredded romaine to wooden bowl and mix, then add Parmesan cheese and toss lightly. Serve salad, top with croutons, and sprinkle with more cheese, if desired.
