Lazy Lasagna

My oldest sister taught me this recipe when I was a teenager. She was in nursing school and had a bunch of super easy weeknight meals that even a 15 year old could cook successfully. I remember she was on a budget, but she still made well rounded meals that we all enjoyed. She would serve this dish with some microwaved canned corn, buttered with salt and pepper.

Lazy Lasagna

A quick, convenient week night dinner.

Ingredients

  • 1 lb ground chuck
  • 1 jar tomato sauce
  • 12 oz egg noodles
  • 2 cups mozzarella cheese shredded

Instructions

  • Preheat the oven to 375°F.
  • In heavy bottomed pot cook the beef on medium high heat, stirring to crumble the meat.
  • Once the meat is cooked through drain the excess grease.
  • Reduce the heat to medium and add the sauce to the beef, stir to combine.
  • Allow to simmer for 20 minutes.
  • Meanwhile follow the package instructions on the egg noodles, but reduce cook time by 2 minutes.
  • When the noodles are cooked and drained add them to the meat mixture.
  • Transfer the pasta to a 9×13 casserole dish, top with the cheese, bake 10-15 minutes, until the cheese is golden and bubbling.
