Black Bean Dip

This recipe can be made as a side dish, as a dip, or a main meal for a baby or toddler. It’s delicious topped with cheese and/or fresh onion and cilantro. My original version was made using leftover bacon grease as the oil, it created an extra layer of flavor and smokiness. Let me know what y’all think!

Black Bean Dip

Ingredients

  • 2 tbsp oil
  • 1 onion rough chopped
  • 1 bell pepper rough chopped
  • 2 cans black beans rinsed and drained
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tsp cumin
  • 2 tsp granulated garlic
  • 1/2 cup water or broth

Instructions

  • Heat oil on medium high in small pot.
  • Add onions and peppers cook for 10-15 minutes until golden brown.
  • Add in seasonings, beans, and the cooking liquid.
  • Reduce heat to medium low and allow to simmer for 30-45 minutes, stirring occasionally and adding more liquid as needed to prevent sticking and scorching.
  • Then, use an immersion blender, regular blender, or food processor and pulse the bean mixture until smoth.
  • Serve immediately with chips or as a side dish topped with cheese.
