Roasted Cauliflower Hummus
This is a bean free hummus, the cauliflower becomes the base of this delicious dip. Level it up with by adding some grated parmesan cheese to the mix!
Roasted Cauliflower Hummus
Ingredients
- 1 head cauliflower washed and roughly chopped
- 5 cloves garlic peeled and smashed
- 1/4 cup tahini
- 1/4 cup olive oil extra virgin
- 2 tbsp lemon juice
- 1 tsp salt
- 1 tsp paprika
Instructions
- Preheat oven to 400°F and line a baking sheet with silpat, parchment paper, or spray.
- Place cauliflower and garlic on sheet pan, drizzle with oil, salt, and paprika; toss to evenly coat.
- Bake for 20-25 minutes until the cauliflower and garlic are fork tender.
- Move cauliflower, garlic, and remaining ingredients to food processor; process until smooth, add water as needed to get desired texture.
