Carrots and Ground Meat

This is a meal that comes from my husband's childhood. It's a budget friendly meal, both in terms of money and time. It's a house favorite and all of the ingredients are staples that I try to keep on hand!

Ingredients

  • 2 tbsp oil
  • 2 lbs ground chuck
  • 1 onion chopped
  • 1 lb carrots fresh, diced
  • 5 cloves garlic minced
  • 1/2 cup beef broth
  • 5 dashes Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp granulated garlic

Instructions

  • In heavy bottomed 8 quart pot heat the oil on medium high. Add the ground beef and crumble as it cooks with wooden spoon. When all the ground meat is cooked (no pink) move it to a strainer to allow excess grease to drain, but leave a layer of grease in the pot. Return to medium high heat, add onions and carrots, stir to combine and allow to cook for 10-15 minutes, stirring regularly. Once the carrots are al dente reduce heat to medium and add garlic. Cook for another 5 minutes. Add the beef to the pot stir to combine. Add broth, Worcestershire, and seasonings. Allow to simmer for 5-10 minutes, stirring to prevent sticking. Serve over rice and enjoy!
