A New Way to Oatmeal!

Creamy, Savory Oatmeal topped with rosemary granola, sweet and spicy almonds (chopped), goat cheese (crumbled), thinly sliced pear, a sprinkle of cayenne, and a drizzle of honey.

Oatmeal is a breakfast option that makes me feel warm and safe, but can sometimes be too boring to make the effort of it worthwhile. So, when I heard about this variation I just had to try it! I have had the classic savory oatmeal, but it just didn’t land for me, the texture felt like it needed brown sugar (if that makes sense?). With this version, the texture is what I imagine (romantically) porridge to have been like. It is rich and velvety. The toppings I used added crunch, tang, crisp, spice, and sweetness. It was a party in a breakfast bowl! Add to that the recognition that oatmeal is a decent source of fiber, protein, iron, and magnesium, plus extra protein from the egg, it’s one heck of a meal. Then, you have the option to top it with more delicious and nutritious treats. While I went slightly sweet, you could go completely savory too with something like mushrooms, spinach, cheddar, and crumbled bacon. Top it with a fried egg for extra fuel!

Creamy, Savory Oatmeal

Ingredients

  • 1 cup water
  • 1/3 cup oat flour (blended oats)
  • Dash salt
  • 1 egg well whisked

Instructions

  • Bring water to boil in small pot, add the oat flour, reduce heat to low and stir until all of the water is absorbed. While continuously whisking add in the egg, then turn off the heat. Transfer the oatmeal to your serving bowl and top with your choice of toppings, they can be sweet, savory, or a mix like mine, pictured above.
